Since I love coconut, I’ve experimented a lot with coconut french macaron recipes over the years for holidays and celebrations for friends and family. This Coconut French Macaron Recipe is one of my favorite treats made with coconut. Difference Between Coconut Macarons And Coconut Macaroons
It is almost identical to pronounce the names and ‘macaroons’, but these confections have evolved into completely different cookies from their common ancestor. It is the main ingredient that distinguishes macarons from macaroons. Macarons are prepared from almond meals, whereas coconut macaroons are prepared from shredded coconut.
The batter has ground almond flour, egg whites, and confectioners’ sugar — These are the basic components of French macarons. The macaron shells puff up, resulting in a smooth surface with a hollow center and distinct “foot.”

The airy almond meringue is then shaped into sandwich cookies, filled with buttercream, jam, ganache, jam, etc then chilled, resulting in an equally chewy center and a shell-like top. You can find macarons in a variety of colors and flavors.

Coconut French Macaron Recipe
Equipment

Ingredients
For Macaron Shell:
- 183 g Powdered Sugar
- 200 g Almond Powder
- 152 g Egg White
- 152 g Granulated Sugar
- 2-3 drops Blue And White Gel Food Color
For White Chocolate Coconut Ganache:
- ½ Cup White Chocolate
- 1 Cup Coconut Milk
- 1 Tbsp Coconut Flakes
- ½ Tbsp Grounded Nut
Instructions
For Macaron Shell:
- You need almond flour for macarons. Sieve 183 grams of powdered sugar and 200 grams of almond powder in a separate bowl.
- In another large bowl, pour 152 grams of room temperature egg whites and whisk with the help of a hand mixer.
- Add152 grams of granulated sugar to the bowl. Once more, whisk well until stiff peaks are formed.
- Finally, add blue and white food color to the bowl since they are coconut macarons.
NOTE: Only gel foodcolors should be used.
- Now combine the sieved almond flour and powdered sugar in the egg white coloring mixture. Slowly mix the ingredients thoroughly by using the spatula.
NOTE: Fold the mixture for combining it. Scrape the sides of the bowl starting from the center and moving as gently as possible.
- Continue mixing until you achieve the desired color and texture. Fold and mix until the batter is smooth. Be careful not to overmix. If the macaron shell batter melts when drizzled on top of itself, it is ready.
- Next, take a baking or piping bag fitted with a #6 and carefully transfer the batter into the bag.
- Once the piping bag is filled with the batter, snip the end.
- Next, draw 2-3 circles on the parchment paper or the baking sheet and fill them up from the center, moving the bag to the edges of the circles.
- Pipe the bag into a macaron shape.
- Pipe the macarons onto the parchment paper or baking sheet in 1½-inch circles, leaving at least 1-inch between two circles.
- Tap the baking sheet onto the kitchen platform to get rid of the air bubbles. Allow the baking sheet to sit at room temperature for around 20-30 minutes before baking.
- Check and make sure nothing sticks to your finger before baking. If it doesn’t, you’re good to proceed further.
- Preheat the oven to 150°. To get macaron shells, bake them at 140° Celsius for 15 minutes.
- Once the macarons are baked, remove them from the oven and allow them to cool completely on the baking sheet.
For White Chocolate Coconut Ganache Filling:
- Step one, take the white chocolate in a bowl. Then, pour the coconut milk into the white chocolate. Melt this mixture just for 5 seconds.
- Next, stir this mixture until incorporated.
- Now, add the wide coconut flakes and grounded nut into it and mix them.
- Finally, your coconut white chocolate ganache is ready.
Assembly Of Macaron Shells And White Chocolate Coconut Ganache:
- The first step is to demold the macarons from parchment paper. Then, place a single macaron at the bottom.
- Then fill in the white chocolate coconut ganache using a baking or piping bag. Place another macaron on top of the banana buttercream layer.
- Sandwich the macarons on the bottom with the one on the top.
NOTES
- Keep the macaron at least 40-50 minutes for cooling before starting assembly.
- If you want a professional smooth looking macaron, then you have to use very very fine almond flour to get that texture. So blend the grounded almond flour again in a food processor.
- Always sieve the ingredients after blending them in the food processor.
- Slowly add the granulated sugar into the already whisked white eggs. Don’t pour all the granulated sugar at a time.
- Mix the egg whites and the granulated sugar mixture or the meringue until stiff peaks form.
- The baking time and temperature can slightly vary depending on the different ovens.
