    Making Process:

    • Take a small bowl, and in it mix the active dry yeast with 1/2 cup of warm water and 4 tsp sugar. Allow it to sit for around 10 minutes, so a layer of bubbles is formed. This will activate the yeast, which will double the dough.
    • Now, in a separate bowl, add the ground flaxseeds and baking powder. Add some water and keep it aside for 20 minutes.
    • Next, in another bowl, add nuts and dry fruits and add 2 tbsp all-purpose flour. Toss it gently so the nuts and dry fruits get coated well. Keep aside.
    • Using a stand mixer or hand blender mix the flour, yellow food color, and vegan butter. Whisk it. Gradually add sugar in small portions, whisk it, and repeat until all the sugar combines.

    • Now add the flex seed mixture to the whisked cake mixture. Blend it properly using a spatula.
    • Add the orange and almond extracts. Then add the yeast mixture and maple syrup and keep mixing until well integrated.
    • Gradually, add in room temperature non-dairy milk. Mix it well.

    NOTE – Don’t use too hot or cold milk. Use room temperature for desired results.

    • Now, add the lemon zest. Mix well with a stand mixer for 10 -15 minutes.

    Baking Process:

    • Spray or grease some oil on the dough and cover with a towel. Allow it to rest for 10-20 minutes.
    • Meanwhile, prepare a bowl by greasing or spraying some oil. Place a parchment paper in the container.
    • Knead the dough for a few minutes on a floured surface.

    NOTE – The dough should be sticky, but if it feels too sticky add some flour. Do not add too much flour, it should remain fairly sticky.

    • Transfer the dough to the prepared bowl and cover it with a tea towel. Rest in a warm place for 1-2 hours, or until doubled insize.
    • Once it has doubled in size, take it out of the bowl, and place it on a floured surface.
    • Add the nuts and fruit and knead until well integrated.

    • Take the dough and place it in the panettone paper mold. Cover it again with a towel and let it rest for 30-40 mins.
    • Preheat the oven to 350°F. Right before putting the panettone in the oven, brush the top well with maple syrup. Then, bake for 45 minutes.
    • Let it cool completely before serving. Garnish with more powdered sugar and serve with a cup of tea or coffee.
