Easy Ensaymada Ube Recipe: A Must-Try Purple Treat

A couple of years ago, I happened to visit a friend’s birthday party. It was there that I tried something that stayed with me forever. You guessed it right, it was Ensaymada ube. I can never forget the taste of that fresh ube ensaymada.

I asked my friend ‘how to make an ensaymada ube.’ After the party, I took notes on how to make ube bread. Since I already knew about purple taro and how to cook ube, I was excited to try it out. And guess what? It turned out perfect on the first try itself.

I have tried out several ube recipes in the past but the ube ensaymada one was just different.

There is no doubt that ensaymada Ube from the Philippines is one of the most popular pastries all year long there, either as a gift or for party snacks. Because of their vibrant appearance, luxurious topping (butter, jam, sugar, cheese, etc), and rich taste, they are quite mouth-watering for people of all ages.

Ensaymada – The Shape!

Ensaymada Ube has a coil like shae. If you ask anyone to describe it, they will call it “purple looking coiled bread filled with ube jam” and I wouldn’t call it wrong. The ensaymada ube’s dough is made from flour, eggs, water, and sugar. This dough is really well kneaded.

Next, it is rolled out into a very thin layer and spread with lard. Using hands, it is then coiled into a spiral by hand. Traditionally, it is fermented once for at least 11-12 hours only then it is baked. Lastly, the freshly baked crust is dusted with powdered sugar.

Ensaymada ube is so ingrained in Filipino culture. Christmas as an excuse for them to enjoy this treat, coiled pastry topped with an ube jam and a very generous sprinkling of cheddar cheese. The Filipinos have loved this sweet pastry for years, be it for breakfast with strong coffee, dessert, or even a guilty late-night snack.

Filipinos probably became acquainted with ensaymada during the Spanish Colonial period. It is believed that this delicious treat has been around since the 17th century. It is known as Ensaimada in Spain and other Latin American countries and is made differently there. The Ube Spanish bread recipe has use pork lard instead of butter.

In comparison to the ensaymada we eat today, the original one has a lean dough with just powdered sugar topping. The bread underwent a lot of changes as it evolved into a richer dessert from the 18th century onwards. By the 1900s, the bread developed to suit Filipino tastes.

There are several ways to make and enjoy this treat but ube as a filling or topping is definitely one of them. There is no record of the origin of the Filipino ube recipe or adding ube to ensaymada but it does add a magical sweet depth to this purple treat.

The Magical Ingredients I’ve Used

* Active Dry Yeast:

I always prefer active yeast over instant yeast. This ensures that the yeast is still active before adding it to the dough. But you can also use instant yeast.

* Milk:

I have used 2% to 3% skim milk in this ube bread recipe.

* Oil:

I always used vegetable oil because that’s usually available in my pantry. Any flavorless oil works too.

* Ube Jam Or Ube Halaya:

You can choose any from your favorite brand; the taste that you like the most. It has several health benefits too. I have tried Tropics ube yam jam in this recipe.

* Cheese – Cheddar Cheese:

Use any good quality cheddar cheese. I used Hickory Farms smoked cheddar cheese.

    To Enjoy The Best Ensaymada, Thing To Take Notes

    • For achieving the best results, ensure that all the ingredients are at room temperature before you start the preparation. It is highly advisable to use room temperature butter and eggs.
    • Knead the dough really well but don’t overdo it. Over kneaded dough might turn out hard and make hard bread that is difficult to chew. Also, don’t add too much flour while kneading the dough.
    • If the dough is sticky during the kneading process, avoid adding even more flour. Instead, continue kneading with slightly damp hands.
    • Allow your dough to rise. If the1dough does not rise long enough then the bread will turn out dense, rubbery, or even less flavorful. During the fermentation process, the dough gets filled with gas and facilitates the bread to get an airy texture. As a result of fermentation, the bread also gains flavors.
    • It is advisable to use fresh yeast. During fermentation, as the fresh yeast grows, it results in the reduction of carbon dioxide, which facilitates the dough to expand and rise. The flavor and texture of bread are generally better when the dough rises slowly.
    • It is advisable to eat the ensaymada ube, fresh on the same day of baking it.
    • If you are adding any toppings or garnishing, add it right before serving or when you are ready to eat it.
    • Margarine or butter may cause the bread to harden a bit. If adding the margarine or butter while the ensaymada is still warm, the margarine or butter will melt. I prefer adding margarine when the ensaymada has cooled down completely.

    Baking Tools For Best Results

    1) Silicone Baking Mat:

    Instead of restricting movement due to kneading in a bowl, I prefer a silicone baking mat. It makes kneading easier and better. It also helps in the easier cleanup.

    2) Kitchen Scale:

    It weighs the dough and ensures that each size is in equal portions. This kitchen scale tool is tremendously useful for recipes that require precise proportions.

    3) Rolling Pin:

    A good rolling pin makes a difference. Since the rolling pin spins freely and requires little pressure, it makes the work effective and easier. It helps to evenly flatten the dough.

    4) Scraper:

    A scrapper helps in dividing the dough. It is so much safer and better to use a scraper than a knife.

    Storing Process Of Ube Ensaymada To Enjoy It Later

    Although it is advisable to eat fresh food, it can be stored for up to 1 week in a zip lock bag or an airtight container in the refrigerator. Without a fridge, it can be stored for up to 3 days in a zip lock bag or airtight container.

    Reheating Instruction For The Ube Bread

    To reheat ensaymada ube bread, microwave it for about 40 seconds. As mentioned, each microwave oven has different heating, you may microwave it for additional 30 sections if needed.

    1. Can I use bread flour when trying out the ensaymada ube bread recipe?

    Personally, I have never used it. Since I always have all-purpose flour at hand, I used it. But you can definitely go with bread flour. All-purpose flour is not only easy to work with, it is readily available too.

    The average price is Php100.00 (1.90 USD) for 3 pcs.

    3. Can I give any other shape?

    Ube bread roll!  If you want you can give it a roll type of look. You can make a roll and leave a hollow space and fill in the jam inside once baked.

    4. Can I add macapuno to my ube ensaymada?

    I would recommend a different way. Add it as a topping instead of making ensaymada with ube filling. Due to the excess liquid, the filling might lead to very soggy bread.

    5. How to eat ube bread?

    • 1 Spatula

    Ingredients
      

    For Dough:

    • 2 Cups All-Purpose Flour
    • 6 Tbsp Granulated Sugar
    • 3 tsp Instant Yeast
    • 1 tsp Baking Powder
    • 1 tsp Salt
    • 1+4 Cup+Tbsp Milk
    • 2 Large Egg
    • 1 Tbsp Vegetable Oil
    • 5 Tbsp Melted Unsalted Butter

    For Filling:

    • 1 Cup Ube Halya
    • 1 Tbsp Melted Butter

    For Topping:

    • 5 Cup Grated Cheddar Cheese
    • 5 Cup Ube Jam

    Instructions
     

    The making process of ube ensaymada has several steps. Relax! I have broken them down into easy and manageable parts that are simple for you to follow.

      Making Process:

      • First, sieve the all-purpose flour in a bowl.Now, transfer the sieved all-purpose flour to a stand mixer or dough mixerbowl.
      • Then add the granulated sugar, add baking powder,and add salt to it. Mix well with the help of a spatula.
      • Once done, add instant yeast to it.

      Note- If you are using fresh yeast, crumble the yeast first. If you are using instant yeast, you can use it directly.

      • Now, pour milk. Add melted unsalted butter, eggs, and vegetable oil. Mix well using a spatula.
      • Next, place the bowl in a stand mixer.

      Note- You can prepare the dough by using your hands also.

      • Start the machine with the lowest speed thengradually increase the speed after a few seconds. Knead the dough for 5-6 minutes.
      • Now, remove it from the stand mixer. Check thedough should not stick to the hand when you touch it.
      • Next, apply some oil to your palm and make the dough in a round shape.
      • Now, grease oil on the dough and keep it in anoil greased bowl. Cover the bowl with cling film and keep it until it doublesin size. After 1 ½ hours, the dough’s size will rise.
      • Now take the dough on a baking mat. Flatten thedough and divide them with a scraper. Use a scraper to cut the dough into aneven size.

      Note – You can use a kitchen scale to achieve an even-size dough ball. Here, I used adough ball 40g each.

      • Now, flatten the ball with a rolling pin and makea long rectangular shape. Spread the ube jam mixture with the help of a spoon.

      Note – It should not spread all the way to the edges. Roll it from the longedge side. Pinch the ends to seal.

      • Roll it back and forth until it reaches longer in size. Shape it like a coil and tuck the endpoint properly.
      • Repeat the same process for all the remaining dough balls.
      • Cover the baking tray where you place all theshaped unbaked Ensaymada with a clean cloth for 30-45 minutes until the shapeddough rises.

      Baking Process:

      • Preheat your oven to 370° F. When theshaped dough is doubled in size, bake them for 12-15 minutes in the preheatedoven.

      Note- Heating varies in every oven. So, thebaking time can vary from 10-18 minutes. Therefore, keep an eye on the oven andthe baking items from the outside when 10 minutes are over. Remove from theoven once it is appropriately baked and has a golden brown color.

      • Allow it to cool for 10 minutes then remove.

      For Topping And Serving:

      • Brush the melted butter to make the baked Ensaymada soft.
      • Next, garnish with the grated cheddar cheese fromthe top. Sprinkle some granulated sugar on top and add some ube halaya or jamon top of it.

      NOTES
