Ube is a starchy bright purple vegetable which is known as purple yam. Ube and purple sweet potatoes are not the same.
We are often confused with Ube, Taro and Purple sweet potato.
Taro is not as vigorous in colour and sweet in taste. It is used in salty or tangy dishes. Diversely, purple sweet potato is having a more intense purple colour and sweetness. But if you are not able to find ube, you can use the purple sweet potatoes as a substitution for the ube.
It is found in Asia, especially in the Philippines. Ube is also found in South and East Asia, Northern Australia, and New Guinea.

Expert Tips To Get The Perfect Macaron
- If you want a professional smooth looking macaron, then you have to use very very fine almond flour to get that texture. So blend the grounded almond flour again in a food processor.
- Always sieve the ingredients after blending them in the food processor.
- Slowly add the granulated sugar into the already whisked white eggs. Don’t pour all the granulated sugar at a time.
- Mix the egg whites and the granulated sugar mixture or the meringue until stiff peaks form.
- Mix the almond and powdered sugar mixture in the meringue by folding the batter from top to bottom and pressing sometimes to release the air bubbles.
- Always tap the tray after making the macarons so that the air bubbles come at the top edges of the macaron.
- Fix the air bubbles with the help of a toothpick.
- Always keep the macarons in the air for a minimum of 20-30 minutes to dry them up.
- Don’t overbake the macarons.
- The baking time and temperature can slightly vary depending on the different ovens.

Ingredients
Here, I shared the list of ingredients that were needed to make the ube macaron. I provided the ingredients in weight (grams) and as well as in cups so that you can easily make it without any confusion.
Ingredients For Making Ube Macaron Shells:
- 1 ½ Cup Almond Flour(150g)
- ¼ Cup Granulated Sugar ( 50g)
- 2 Cups Powdered Sugar(240g)
- 4 Pieces Egg Whites (120g)
- ½ tsp Ube Extract
- ½ tsp Tartar Cream
Ingredients For Ube Macaron Cream:
- 4 Pieces Egg Yolks (72g)
- 4 Tbsp Milk (56.7g)
- ⅓ Cup Powdered Sugar(35g)
- ½ Cup Butter (1Stick Or 113g), room temperature
- ½ Cup Ube Jam ( ½Cup)
- 2 Cups White Chocolate ( 2 Cup Or 300g)
Instructions
How To Make UbeMacaron?
Instruction For Making The Ube Macaron Shells:
- First, take your dry macaron shell ingredients like almond flour and powdered sugar in a sieve so that there will be no lumps and collect the sieved ingredients in a bowl.
- Now, take the egg whites in a mixer or food processor and blend them at a medium speed.
- Then, add the cream of tartar and then slowly add the granulated sugar and increase the speed of the food processor.
- Don’t stop the mixer in between this time and continue the process until the stiff peaks form.
- Now, add the Ube extract with it and again mix it well.
- Next, add the sieved almond flour and the powdered sugar with it and stir it nicely until a creamy texture will come.
- After that, take a piping bag and place a nozzle (You can use the Wilton2A nozzle) for making the ube macarons.
- Transfer the ube macaron batter into the piping bag and let it come to the front side of the bag by pressing it.
- Now, place parchment paper on the baking tray.
- Just press the piping bag so that, the batter will be released as a macaron shape. Repeat this process maintaining a minimum gap between the macarons.
- Then, tap the tray when all the macarons will be completed with the rest of the batter.
- If any air bubbles come, try to fix them with the help of a toothpick.
Let’s Start baking
- Then, keep the tray with the ube macarons into the fan or at normal temperature for 20-30 minutes to dry them up.
- After 20 minutes, check the edges of anyone macaron with your finger. If it is not sticking to your finger, then your ube macarons are ready to bake.
- Lastly, bake them for 12-18 minutes at 310° fahrenheit.
- Then, take them out from the oven and your ube macaron shells are ready now for filling!
Instruction For Making The Ube Macaron Cream:
- For making the cream for the macarons, take the egg yolks first in a mixing bowl and add the powdered sugar.
- Stir the mixture now with the help of a whisk.
- Next, turn on your gas oven at a low medium flame. Add the milk and the white chocolate chips to the mixture and stir it nicely with the whisk.
- Keep whisking it as the egg yolks should not be cooked. You just need to prepare a thick, creamy texture.
- When the creamy texture will be formed, place the bowl in the fridge for15-20 minutes.
- After taking the mixture out from the fridge, you will observe the texture of the mixture become thicker and creamy.
- Now, take the butter in a food processor or mixer and just give it a mild whisk.
- Then, add that egg yolk mixture, ube jam and the ube extract with the butter and whisk it properly.
- Finally, your ube macaron cream is ready for filling.
Assembly Time:
- Now take a pair of the macaron.
- First, place one macaron and then fill the cream on the top of that macaron with the help of a piping bag and nozzle (Wilton 2A) as you used forpreparing the macarons.
- After that, place another macaron on top of that cream and continue the similar process for the rest of the macarons.
