  • 1 Tbsp All Spice Powder (Mix Of Nutmeg, Cardamom Cloves And Cinnamon)

For Caramelization:

  • 1 Cup Sugar
  • ½ Cup Water

  • Cup All-Purpose Flour
  • 1 Pinch Salt
  • 1 tsp Baking Powder
  • ½ tsp Baking Soda
  • 200 g Unsalted Butter
  • 4 Piece Eggs
  • 1 tsp Vanilla Syrup
  • 2 Cup Brown Sugar

Instruction Of Making Plum Cake With Rum:

    Process Of Soaking Fruits:

    • First, chop all the dry fruits and take them in a air tight container. Then, add the rum and the orange juice to the chopped fry fruits.
    • Now, add the ginger powder and all spice powder to the mixture.
    • Next, pour the orange and lemon zest into it.  Now, mix them well.
    • Cover the mixture container with the help of a foil first and then with a lid and keep it closely tight.
    • Now, let this mixture soak overnight in the rum and orange juice and keep it aside for atleast overnight or for 1 day.

    Making The Caramel:

    • Next, add the sugar in a pan and heat the pan on a medium flame burner and let this sugar melt down slowly. 
    • When the sugar starts melting and itturns into golden brown in color then, give it a good stir. Also swirl the panaround.
    • At that time, you will see the bubbles will form, then add the ½ cup of water.
    • Boil it for 15 seconds more and turn off your gas oven.
    • Now dark rich caramel syrup is ready. Keep it aside and stir it in between to let it cool down fully.

    Preparation Of Making Plum Cake Batter:

    • First, take the unsalted butter in a bowl. Beat the butter with the help of a hand mixer or electric beater until a soft texture will form.
    • Next, add the brown sugar and a pinch of salt and beat the whole mixture until the brown sugar will be dissolved and the mixture is nicely combined.
    • Ultimately, a fluffy, soft mixture will be formed.
    • Now, pour the egg and beat the mixture. Follow this process and add all 4 eggs in the same way.

    NOTE: Don’t add all the eggs at a time. Pour them one by one and stir continuously.

    • Add the vanilla essence.
    • Next, strain the soaked fruits with the help of a sieve and separate the excess liquid mixture (orange juice and rum) from the soaked fruits.
    • Cut the nuts (Almonds, Walnut, Cashews, Pista) into medium slices.
    • After that, take the all-purpose flour, sliced nuts and add the soaked fruits from the sieve and stir it well with the help of a spoon until large clumps of flour will break.

    NOTE: This binding process is very important in the making of a plum cake. It resists the fruits and nuts from sinking to the bottom of the plum cake. Keep it aside.

    • When the fruits will be well combined, pour the butter mixture into it and add the caramel syrup which you prepared earlier. Mix them very well.
    • Next, take the baking tin and butter paper. Grease the tin and butter paper with the oil or melted butter using a brush.
    • Place those butter papers at the bottom and side wall of the cake tin.
    • Then, mix the baking powder and baking soda in the batter at the last moment when everything is ready to bake.
    • Now, transfer the whole batter in the prepared cake tin.
    • Garnish with some dry fruits and nuts.
    • Now place the cake tin into a preheated oven and bake it on 160° for 80-90 minutes.
    • Run a toothpick test. Let it cool for 10-20 minuetes.
    • Brush the cake with rum and enjoy this delicious rich cake at home.
